BLT Deviled Eggs

If you're a brunch lover like me, THESE BLT Deviled Eggs are for you! Because adding brown sugar bacon, minced romaine lettuce and sugar bomb tomato slices is the deviled egg upgrade you never knew you needed until now! These are fabulous and would make a lovely addition to your next brunch get-together. An added bonus is that you can prep them ahead and tuck them in the fridge until you're ready to serve.

Ingredients

  • 1/4 cup mayonnaise
  • 1/4 teaspoon Dijon mustard
  • 1 teaspoon minced shallots
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 3 hard-boiled eggs (8-minute eggs, in my book!), sliced in half.
  • 2 tablespoons minced romaine lettuce
  • 2 slices brown sugar bacon*, thinly sliced
  • 2 sugar bomb tomatoes

Instructions

  1. Combine mayonnaise, Dijon mustard, shallots, salt and pepper in a mixing bowl. Add egg yolks and mix thoroughly.
  2. Scoop mixture into cooked egg whites.
  3. Garnish with thin sliced of brown sugar bacon, minced romaine lettuce and sugar bomb tomato slices.
  4. Finish with a sprinkle of Maldon salt and a parsley sprig.
