BLT Salad Skewers

These super simple BLT Salad Skewers with the sweet and tangy Creamy Red Wine Vinaigrette are the BEST way to bid farewell to summer in the near future, my friends. Shake up the dressing in a covered jar while the Brown Sugar Bacon cooks itself in the oven, and then spend just a few moments threading the lettuce chunks, Brown Sugar Bacon slices and fresh cherry tomatoes on skewers to cover and tuck away in the fridge until you're ready to drizzle with dressing and enjoy!

Ingredients

  • 12 slices bacon
  • 2 tablespoons brown sugar
  • 1/4 cup sour cream
  • 1/3 cup buttermilk
  • 1/4 cup Best Foods real mayonnaise
  • 1/4 cup red wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Kosher salt
  • 1 pint cherry tomatoes
  • 1 head iceberg lettuce, washed and cut into bite-sized chunks

Instructions

  1. Preheat oven to 375 degrees, and line bottom tray and top rack of a broiler pan with aluminum foil.
  2. Arrange bacon slices on foil-lined top and sprinkle with brown sugar.
  3. Cook in preheated oven for 20-25 minutes, or until bacon is cooked through, checking occasionally and rotating broiler pan if necessary. Let cool slightly, then transfer to plastic cutting board and cut slices in half.
  4. While bacon is cooking, make Creamy Red Wine Vinaigrette. in a covered jar, shake together sour cream, buttermilk, mayonnaise, red wine vinegar, olive oil, sugar, garlic powder and salt.
  5. Use bamboo skewers to thread bacon slices, lettuce chunks and cherry tomatoes.
  6. Keep skewers covered and refrigerated until ready to serve.
  7. Drizzle each BLT Salad Skewer with plenty of Creamy Red Wine Vinaigrette.
