Cherry, Brie & Balsamic Bruschetta

Buttery lightly toasted baguette slices topped with warm bubbly brie, ripe juicy cherries, a drizzle of balsamic reduction, a sprinkle of Maldon Salt and a tiny fresh thyme sprig. The fast, fresh, fabulous end-of summer appetizer you'll be making on repeat from here on out. Enjoy!

Ingredients

  • baguette, sliced into thin slices (about ten slices, save the rest of the baguette)
  • 1/4 cup butter, softened
  • wedge of brie, cut into 10 thin slices
  • 6 ripe cherries, pitted and thinly sliced
  • balsamic reduction
  • 1/f teaspoon Maldon salt
  • fresh thyme sprigs

Instructions

  1. Preheat oven to broil, and line a baking sheet with parchment paper.
  2. Butter baguette slices, then top with a brie slice. Broil in preheated oven briefly, just until brie is bubbly and edge of baguette slices are light golden brown.
  3. Remove from oven, then top each with a few cherry slices, drizzle with balsamic reduction and sprinkle with Maldon salt and add a tiny thyme sprig garnish.

Serve immediately and enjoy!
