Ingredients

  • 6 slices bacon
  • 1/4 cup brown sugar
  • 1/2 cup fig jam
  • 6 raincoast crisp crackers
  • 2 ounces goat cheese
  • balsamic drizzle
  • Maldon salt

Instructions

  1. Preheat oven to 375 degrees and wrap top and bottom of broiler pan with aluminum foil.
  2. Lay bacon strips on top of prepared pan and sprinkle with brown sugar.
  3. Bake in preheated oven until browned, about 20 minutes.
  4. Use tongs to transfer brown sugar-bacon to a sheet of parchment to cool, so it doesn't glue itself to the foil. Use scissors to cut bacon into smaller strips that fit on the crackers..
  5. Spread fig jam on the top of each cracker, then top with a slice of brown-sugar bacon and a wedge of goat cheese. Drizzle with balsamic drizzle and sprinkle with Maldon salt. Enjoy!
