Protein Packed Breakfast Bowl
Serving up these Protein Packed Breakfast Bowls just in time for a healthy reset before summer is in full swing, my friends! Such a pleasing combination of spicy black beans, crunchy red bell pepper, diced creamy avocado, a perfectly poached egg and a drizzle of chipotle cream.
Ingredients
- 1 cup canned black beans, drained
- 1 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 2 eggs
- 1/2 cup sour cream
- 1 teaspoon adobo sauce
- 1 red bell pepper, seeded and diced
- 1 ripe avocado, diced
- additional chili powder, for garnish
Instructions
- Bring a medium saucepan of salted water to a gentle simmer.
- Crack eggs and slide eggs into simmering water. Let cook for 4 minutes for a sunny egg yolk with slightly jammy edges. Cook for a bit longer if you prefer a jammy yolk.
- Remove poached egg with a slotted spoon.
- While eggs are poaching, warm black beans in the microwave. Stir in chili powder and salt.
- Plate half of the seasoned black beans in each serving bowl.
- Add diced red bell pepper and diced avocado to each bowl.
- Stir together sour cream and adobo until well-mixed. Transfer to baggie, seal and snip corner.
- Place warm poached eggs on top of assembled bowls.
- Drizzle poached eggs with chipotle cream and sprinkle with additional chili powder.
