These Easiest Ever Spicy Peanut Noodle Salad Jars are the super satisfying go-to picnic side salad you'll be making on repeat from now on, my friends. Al dente linguine noodles tossed in spicy peanut dressing topped with edamame and diced red and yellow bell pepper garnished with chopped peanuts, sliced scallions and fresh basil leaves, and red chili flakes if you want an extra kick. Cooking the linguine takes just about ten minutes which is just enough time to whisk together the spicy peanut dressing and prep the veggies. I'd recommend assembling and tucking in the fridge, then transferring salad contents to salad plates and passing extra dressing. They'll be much easier to enjoy that way. Ingredients
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 1/4 cup water
- 1 tablespoon ginger paste
- 2 cloves garlic, minced
- 2 tablespoons brown sugar
- 1-2 tablespoons hot sauce
- 1/2 pound linguine noodles
- 1/2 cup frozen shelled edamame, thawed
- 1 red bell pepper, diced
- 1 yellow pepper, diced
- 2 scallions, thinly sliced
- 1/4 cup dry roasted peanuts, chopped
- fresh basil leaves, for garnish
- red pepper flakes, for garnish, if desired
Instructions
- Cook linguine in simmering water until al dente, about ten minutes. Drain and let cool briefly.
- While linguine is cooking, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, water, ginger paste, garlic, and brown sugar. Whisk in 1 tablespoon hot sauce and taste again. Add additional hot sauce to taste. Reserve 1/4 cup spicy peanut sauce and set aside.
- Toss cooled linguine with spicy peanut sauce. Transfer to jars.
- Top with vegetables, then garnish with scallions, peanuts, basil leaves and red pepper flakes.
- Cover jars and store in refrigerator until ready to serve.
- Transfer Spicy Peanut Noodle Salad to serving plates and pass additional Spicy Peanut Dressing.
