Strawberry Arugula Salad with Quick-Pickled Red Onion Rings, Goat Cheese and Toasted Almonds

Let’s make Strawberry Arugula Salad with Quick-Pickled Red Onion Rings, Goat Cheese and Toasted Almonds, my friends!

Ingredients

  • 1/2 cup thinly sliced red onion rings
  • 1/4 cup water
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey white balsamic vinegar
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons balsamic glaze
  • 1 teaspoon rice wine vinegar
  • 2 teaspoons olive oil
  • 2 teaspoons heavy cream
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 cups baby arugula
  • 2 cups sliced strawberries
  • 1 cup diced cucumbers
  • 1/2 cup crumbled goat cheese
  • 1/2 cup toasted almonds

Instructions

  1. Put sliced red onion rings in a covered jar.
  2. Add water, red wine vinegar, honey white balsamic vinegar, 1/4 teaspoon salt and sugar. Cover, shake and refrigerate until ready to use.
  3. in a second jar, shake together  balsamic glaze, rice wine vinegar, olive oil,  heavy cream, 1 tablespoon water, 1/4 teaspoon salt and 1/8 teaspoon freshly ground pepper.
  4. Toss dressing with arugula, sliced strawberries, diced cucumbers, goat cheese, quick-pickled red onion rings and toasted almonds.
