Wedge Salad Skewers

Wedge Salad, but put it on a skewer, I say! Thread cherry tomato first, then blue cheese wedge, then Brioche crouton and end with romaine cube. Drizzle with Buttermilk Blue Cheese Dressing and balsamic drizzle and enjoy, my friends!

Ingredients

  • 1/4 cup sour cream
  • 1/3 cup buttermilk
  • 1/4 cup real mayo
  • 12 ounces blue cheese crumbles
  • 1/4 cup red wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • 1/4 teaspoon garlic powder
  • 4 slices brioche bread
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon Herbes de Provence
  • 1 pint cherry tomatoes
  • 8 ounces blue cheese, cut into bite-sized wedges
  • 2 romaine hearts, cut into bite-sized cubes
  • Balsamic Drizzle, for garnish

Instructions

  1. Whisk together~ sour cream, buttermilk, real mayo, 2 ounces blue cheese crumbles, red wine vinegar, 1 tablespoon olive oil, sugar and garlic powder to make Buttermilk Blue Cheese Dressing.
  2. Cut 4 slices brioche bread into 1-inch squares. Place in medium mixing bowl and toss with 3 tablespoons olive oil, 1 teaspoon kosher salt and Herbes de Provence.
  3. Heat medium sauté pan over medium low heat and sauté seasoned Brioche squares just until light golden brown, turning to toast both sides.
  4. Skewer cherry tomato, Brioche crouton, blue cheese wedge and lastly romaine cube on wooden skewer.
  5. Drizzle with Buttermilk Blue Cheese Dressing and Balsamic Drizzle.
