White Chocolate-Dipped Cheesecake-Stuffed Strawberries

These wonderful white chocolate-dipped cheesecake-stuffed strawberries are a snap to make and would be lovely to serve for brunch or as a part of a dessert spread at your next party.

Ingredients

  • 12 fresh strawberries, washed and dried
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon almond extract
  • 1/4 cup pistachios, chopped
  • 1 cup white chocolate chips
  • fresh mint leaves, for garnish

Instructions

  1. Core strawberries with vegetable peeler and slice tip of bottoms off so the strawberries stand up on their own.
  2. Beat together cream cheese, powdered sugar, heavy cream and almond extract.
  3. Pipe cheesecake filling into prepared strawberries.
  4. Melt white chocolate in microwave at 30 second intervals and stir until smooth. Dip stuffed strawberries in melted white chocolate.
  5. Sprinkle with chopped pistachios.
  6. Garnish with fresh mint leaves.

Serve immediately and enjoy!

*These are best enjoyed right after the white chocolate cools. Don't make ahead, as they won't stay fresh.
