These wonderful white chocolate-dipped cheesecake-stuffed strawberries are a snap to make and would be lovely to serve for brunch or as a part of a dessert spread at your next party.
- Core strawberries with vegetable peeler and slice tip of bottoms off so the strawberries stand up on their own.
- Beat together cream cheese, powdered sugar, heavy cream and almond extract.
- Pipe cheesecake filling into prepared strawberries.
- Melt white chocolate in microwave at 30 second intervals and stir until smooth. Dip stuffed strawberries in melted white chocolate.
- Sprinkle with chopped pistachios.
- Garnish with fresh mint leaves.
Serve immediately and enjoy!
