Ingredients

  • Olive oil spray
  • 1 medium zucchini, sliced into thin rounds
  • 1 small yellow squash, sliced into thin rounds
  • 1 medium tomato, sliced
  • 1 red bell pepper, seeded and sliced
  • 1 sweet onion, thinly sliced
  • 6-ounce can tomato paste
  • 1 teaspoon dried thyme
  • 1/4 teaspoon kosher salt
  • freshly ground pepper
  • 1/4 teaspoon garlic powder
  • fresh thyme sprigs, for garnish

Instructions

  1. Spray a baking sheet with olive oil spray, then arrange your vegetable slices in a single layer and giving them a spray of olive oil, and a sprinkle of salt and pepper before roasting in 375 degree oven for 15 minutes.
  2. Season 6 ounces tomato paste with 1/4 tsp. salt, a few grinds of freshly ground pepper, and 1/4 teaspoon garlic powder.
  3. Decrease your oven temperature to 350 degrees, spray the insides of your 8 ounce can rings with olive oil spray and arrange them on a parchment lined baking sheet.
  4. Layer up your roasted vegetables, spreading seasoned tomato paste in between vegetable layers and season assembled stacks with salt, pepper and thyme before baking for 20-30 minutes.
  5. Let Ratatouille Composé stacks rest briefly before pulling rings and serving.
