Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 2 teaspoons pure almond extract
  • 3 1/2 cups flour
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat oven to 320 degrees and set rack in middle of oven.
  2. Cream butter and sugar with electric mixer until thoroughly combined.
  3. Beat in egg and almond extract until light and fluffy.
  4. Stir together flour and salt and beat into dough.
  5. Knead cookie dough with your hands for about ten minutes, until firm.
  6. Wrap dough tightly in plastic wrap and refrigerate for an hour.
  7. Roll out dough to a thickness of 1/8 inch.
  8. Use embossed rolling pin to roll over dough pressing down on the rolling pin to create impression.
  9. Cut out desired shapes, place on parchment lined baking sheets and bake in preheated oven for about 11 minutes, until set.
  10. Let cool on cooling rack.
