Wonderful Wedge Salad Jars

All the wonder of a wedge salad layered into a jar~ bite-sized pieces pf iceberg lettuce, creamy blue cheese and ripe juicy cherry tomatoes drizzled with Tangy Buttermilk Blue Cheese Dressing and topped with Brown Sugar Bacon Bits. Yum-o! Layer up a few of these sensational salad jars and head out for a picnic sometime soon!

Ingredients

  • 6 slices bacon
  • 1/4 cup brown sugar
  • 1 head iceberg lettuce, cut into bite=sized pieces
  • 4.4 ounce wedge Castello Danablu blue cheese, cut into bote-sized pieces
  • 9-ounce package Nature Sweet D'Vines red cherry tomatoes on the vine, quartered
  • 1/2 cup sour cream
  • 1/3 cup buttermilk
  • 1/4 cup red wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 375 degrees, and line bottom tray and top rack of broiler pan with aluminum foil.
  2. Arrange bacon slices on foil-lined pan and sprinkle with brown sugar.
  3. Cook in preheated oven for 20-25 minutes, or until bacon is cooked through, checking occasionally and rotating broiler pan, if necessary.
  4. Let cool slightly, then use tongs to transfer bacon to plastic cutting board, and snip bacon into pieces.
  5. While bacon is cooking, combine sour cream, buttermilk, red wine vinegar, olive oil, sugar and garlic powder in medium mixing bowl. Whisk to combine. Whisk in 2 tablespoons blue cheese.
  6. Arrange iceberg lettuce pieces in bottom of jars. Top with quartered cherry tomatoes and blue cheese pieces.
  7. Drizzle with Tangy Blue Cheese Dressing. Then add a second layer of lettuce, tomatoes and blue cheese.
  8. Drizzle additional Tangy Blue Cheese Dressing on top. At their fresh fabulous BEST shortly after assembling.
  9. Cover salad jars with lids and refrigerate.

*Add Brown Sugar Bacon Bits just before serving! They will get soggy if you add them to the jars and refrigerate.
