BBQ Beef Bundles with Caramelized Onions and Smoked Gouda

Fabulous fork-tender BBQ Beef piled high on a pillowy soft potato roll, topped with caramelized onions and melty smoked Gouda wrapped in foil and warmed to perfection. Oh, my...the perfect meal prep sandwich to make the next time you want to bring something memorable to a family picnic or potluck. *NOTE: Carve out a block of time to roast the BBQ Beef ahead of time (it takes 3 hours or so), so you have it cooked and shredded for sandwich assembly.

Ingredients

  • 5-pound beef roast (I used choice angus blade roast)
  • 2 tablespoons olive oil
  • 1/2 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 cup orange juice
  • 3 cups ketchup
  • 1/2 cup butter
  • 1/4 cup olive oil
  • 4 sweet onions, peeled and sliced into thin rings
  • 24 potato rolls
  • 24 slices smoked Gouda cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. In a Dutch oven or other large heavy pot over medium high heat, heat olive oil and brown roast on all sides.
  3. Combine brown sugar, garlic, Worcestershire sauce, orange juice and ketchup, stirring to combine. Pour sauce over roast, cover and cook in preheated oven for 3 to 3 1/2 hours or until fork-tender. Use forks to shred BBQ Beef.
  4. In a Dutch oven or other large heavy pot over medium heat, melt butter and olive oil.
  5. Add onions. and cook stirring occasionally, until softened, continue cooking, stirring frequently until golden brown and caramelized, reducing heat, if necessary to prevent over browning. Let cool, cover and refrigerate until ready to assemble sandwiches.
  6. Cut potato rolls in half horizontally with serrated bread knife to make sandwich tops and bottoms.
  7. Mound BBQ Beef onto potato roll bottoms, top with caramelized onions and sliced smoked Gouda cheese. Then top each with a potato roll top.
  8. Individually wrap sandwiches in foil. (Precut foil sheets work great for this!)
  9. Refrigerate BBQ Beef Bundles until ready to serve.
  10. Rewarm BBQ Beef Bundles on a baking sheet in a 350-degree oven for about 10 minutes, or until warm and cheese is melted.
