Easiest Ever Apple Cake with Heavenly Vanilla Sauce

I'm not kidding when I say this is the Easiest Ever Apple Cake~ made of mostly pantry ingredients plus apples, mixed up in one bowl, baked in one basic baking pan you likely have in your collection~ that you stir together in no time and let bake on its own while you whip up the Heavenly Vanilla Sauce. Inspired by the amazing apple crepes with vanilla sauce my beautiful mom made every year for our long-standing neighborhood Easter brunch, this nostalgic riff brings all of the feels and comes together effortlessly. Oh, my! Sure do hope you love it as much as I do.

Ingredients

  • 2 1/4 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon Kosher salt
  • 3/4 cup buttermilk
  • 1/2 cup oil
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups apples, sliced into bite-sized pieces
  • 1 egg
  • 3 tablespoons sugar
  • 1/4 teaspoon Kosher salt
  • 1/4 cup melted butter, cooled
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups Cool Whip

Instructions

  1. Preheat oven to 350 degrees.
  2. In large mixing bowl, whisk together flour, 1 cup sugar, baking powder, cinnamon, and 1/4 teaspoon Kosher salt.
  3. Add buttermilk, oil, 1 teaspoon vanilla and apples, just until incorporated.
  4. Line loaf pan with parchment that extends over both ends like handles.
  5. Transfer cake batter to prepared loaf pan, smoothing batter evenly in pan.
  6. Bake in preheated oven for about 60 minutes, until toothpick inserted in center comes out clean.
  7. Remove from oven and let cool on cooling rack. (While cake is baking, make the Heavenly Vanilla Sauce.)
  8. Beat egg, 3 tablespoons sugar and 1/4 teaspoon salt until thick and fluffy.
  9. Beat in 1/4 cup cooled melted butter, a little bit at a time until incorporated.
  10. Gently fold in vanilla extract and Cool Whip. Keep covered and refrigerated until ready to serve.

To serve:

Pull cooled apple cake out of loaf pan and transfer to cutting board.

Use serrated knife to cut 1 inch slices.

Transfer apple cake slices to serving plates and top with a dollop of Heavenly Vanilla Sauce.
