Grasshopper Pie Ice Cream Sandwiches

These nostalgic Grasshopper Pie Ice Cream Sandwiches are a nod to the cool and creamy minty icebox pie my mom used to make on hot summer days when we were growing up. Mom's version was marshmallow fluff, creme de menthe and whipped cream piled high in a chocolate cookie crust and frozen. My shortcut riff relies on creme de menthe beat into softened mint chocolate chip ice cream, scooped between mint Oreo thins and rolled in mini chocolate chips to make the cutest little Grasshopper Pie Ice Cream Sandwiches. The recipe makes more ice cream filling than needed for the ice cream sandwiches, so keep the extra covered and in the freezer to enjoy after the Grasshopper Pie Ice Cream Sandwiches are gobbled up. Ingredients

1 package mint Oreo Thins

1/2 gallon mint chocolate chip ice cream

1/2 cup cream de menthe (perhaps a little less)

1/2 cup mini chocolate chips

Instructions

  1. Beat softened mint chocolate chip ice cream and creme de menthe until well mixed. Cover and freeze for several hours until frozen.
  2. Pop one mint Oreo Thin in the bottom of a Norpro 12 mini nonstick cheesecake pan with removable bottoms.
  3. Use cookie scoop to scoop a small amount of grasshopper pie filling on top of each mint Oreo Thin.
  4. Top each with another mint Oreo thin and press down gently to make an ice cream sandwich.
  5. Transfer to freezer and free until firm.
  6. Remove from pan and roll in mini chocolate chips.
