Southwestern Caesar Salad with Spicy Parmesan Crisps

This super simple and satisfying Southwestern Caesar Salad with Spicy Parmesan Crisps features crunchy romaine lettuce tossed in Spicy Caesar dressing topped with sweet corn, hearty black beans, juicy grape tomatoes and creamy ripe avocados adorned with Spicy Parmesan Crisps. Ingredients

  • 1/4 cup real mayonnaise
  • 1/2 clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons freshly squeezed lemon juice
  • 1/4 cup salsa
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder
  • 2 heads romaine, washed, dried and cut into bite-sized pieces
  • 1 cup black beans
  • 1 cup corn
  • 1 cup grape tomatoes, sliced in half
  • 1 ripe avocado, sliced
  • 6 tablespoons grated parmesan
  • 1/2 teaspoon chil powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment and scoop parmesan with tablespoon measuring spoon into 6 small piles, leaving space in between.
  3. Sprinkle chili powder over parmesan.
  4. Bake in preheated oven for 10 minutes. Remove from oven and let cool.
  5. Whisk together mayonnaise, garlic, mustard, Worcestershire, lemon juice, salsa, salt and 1/4 teaspoon chili powder.
  6. Toss romaine with enough dressing to coat. Transfer dressed romaine to serving bowls.
  7. Top with black beans, corn, tomatoes and avocado. Drizzle with remaining dressing.
  8. Garnish with Spicy Parmesan Crisps.
