Summer Celebration Salad

Celebrating the bounty of summer fruits at their very best right now with this Summer Celebration Salad featuring nectarines, cherries and blackberries on red and green leaf lettuce tossed with Honey White Balsamic Vinaigrette. Enjoy!

Ingredients

  • 1/2 cup slivered almonds
  • 3 tablespoons honey white balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons heavy whipping cream
  • dash of salt
  • 2 cups red and green leaf lettuce, washed
  • 1 nectarine, sliced into bite-sized pieces
  • 1 cup cherries, pitted and halved
  • 3/4 cup blackberries, washed
  • few grinds of freshly ground pepper

Instructions

  1. Preheat oven to 300 degees Fahrenheit.
  2. Spread slivered almonds out on baking sheet.
  3. Toast almonds in preheated oven for 8-10 minutes, until lightly toasted.
  4. In a jar, combine honey white balsamic vinegar, olive oil, honey, heavy whipping cream, salt and pepper.
  5. Cover jar and shake until thoroughly combined.
  6. Toss leaf lettuce, nectarines, cherries and blackberries with enough vinaigrette to lightly coat lettuce.
  7. Divide salad among 4 plates.
  8. Drizzle a bit of vinaigrette atop each salad and top with toasted slivered almonds.
