Protein Packed Breakfast Bowl

Serving up these Protein Packed Breakfast Bowls just in time for a healthy reset before summer is in full swing, my friends! Such a pleasing combination of spicy black beans, crunchy red bell pepper, diced creamy avocado, a perfectly poached egg and a drizzle of chipotle cream.

Ingredients

  • 1 cup canned black beans, drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon adobo sauce
  • 1 red bell pepper, seeded and diced
  • 1 ripe avocado, diced
  • additional chili powder, for garnish

Instructions

  1. Bring a medium saucepan of salted water to a gentle simmer.
  2. Crack eggs and slide eggs into simmering water. Let cook for 4 minutes for a sunny egg yolk with slightly jammy edges. Cook for a bit longer if you prefer a jammy yolk.
  3. Remove poached egg with a slotted spoon.
  4. While eggs are poaching, warm black beans in the microwave. Stir in chili powder and salt.
  5. Plate half of the seasoned black beans in each serving bowl.
  6. Add diced red bell pepper and diced avocado to each bowl.
  7. Stir together sour cream and adobo until well-mixed. Transfer to baggie, seal and snip corner.
  8. Place warm poached eggs on top of assembled bowls.
  9. Drizzle poached eggs with chipotle cream and sprinkle with additional chili powder.
